5-minute creamy tomato beans
A rich and creamy tomato bean dish that comes together in 5 minutes, in just one pan! Using canned beans makes this a quick and easy dish that you can whip up any night of the week.

- 2 tbsp olive oil
- 3 garlic cloves left whole but smashed
- 1 x 400g can of cannellini beans drained (yielding approx 240g)
- 60 g tomato paste
- 75 g crème fraîche
- 2 tbsp fresh dill finely chopped
- 1/2 tbsp white wine vinegar
Heat olive oil in a sauté pan and add the smashed garlic cloves. Cook over a medium heat for a couple of minutes until fragrant. Remove the garlic from the oil.
Add the beans and stir to coat in the garlic-infused oil, then add the tomato paste. Cook for 30 seconds before deglazing with 1/4 water to loosen the mixture.
Add the crème fraîche and stir to combine, creating a creamy tomato sauce.
Season to taste with salt and pepper and allow the beans to rapidly simmer for a couple of minutes before removing from the heat.
Finally stir through the chopped dill and add a splash of white wine vinegar for a hit of acidity.
Serve with a drizzle of olive oil and extra fresh dill.
