Peach and rosemary cake! Shared this on my stories Peach and rosemary cake! Shared this on my stories a couple of weeks ago and had so many requests for the recipe so here she is. 2026 is the year of joyful cooking, and for me that’s getting back into baking/making sweets and desserts in general. 

This cake is simple and easy to make. Blends a mix of almond meal and flour, couple of eggs, butter, sugar, vanilla - you get it! But the star is the fruit topping for which I was inspired by a lovely apricot and rosemary cake in @nicolaalamb absolutely brilliant book SIFT (I highly, highly recommend this book!). 

Let me know if you ever want to hear about my short lived caramel business πŸ˜‚ at least I got some stunning photos taken for it by @issycroker way back when.

I love panna cotta! Especially with a cheeky cherr I love panna cotta! Especially with a cheeky cherry compote on the side. Just updated this recipe on my website, so have a look there for the full step by step - enjoy! 

200ml whole milk
200ml cream 
Vanilla 
50g caster sugar 
Gelatine leaf (5g)

Heat milk and cream with vanilla until almost scalding then remove from the heat and allow to steep.

Add the sugar until dissolved, meanwhile bloom the gelatine leaf. Add to the mix until dissolved. Strain into moulds or a tub which is very du jour, or you can cool first over an ice bath to help suspend the vanilla. 

Refrigerate until set!

The best lamb meatballs!! I don’t usually like to The best lamb meatballs!! I don’t usually like to toot the horn but these are insanely delicious and an easy recipe to make. Made with lots of parsley and 7 spices, and what I think is integral here - breadcrumbs - they have a wonderful flavour and texture that reminds me of kibbeh. I like serving them on a bed of sort of tzatziki - more similar to a Lebanese khyar bi laban (cucumber and yoghurt sauce) - the mint takes it to another πŸͺ trust me!

Makes 16 meatballs
500g lamb mince
1-2 cloves of garlic, grated/minced
An entire bunch of parsley, finely chopped
1/2 tsp salt
45g breadcrumbs (dry)
1 egg
Pepper, to taste
1/2 tbsp 7 spices (I make a blend of equal parts black pepper, cumin, coriander, cloves, nutmeg, cinnamon, and all spice) - also found sold as Baharat spice)

Cucumber and yoghurt sauce
200g pot set Greek style yoghurt
1 garlic clove, grated/minced
1 Lebanese cucumber, grated and set over a strainer for 20 min to remove as much liquid as possible
1/2 tsp salt
1 tsp dried oregano
1 tsp dried mint
2 tbsp olive oil

For the meatballs, combine all of the ingredients and shape into balls using an ice cream scoop, then use your hands to roll them until smooth.

Heat olive oil in a large pan and working in batches of 8, sear the meatballs for 2 minutes on each side before transferring to an oven dish.

Bake in the oven for 8-10 minutes at 180c.

Meanwhile make the cucumber and yoghurt sauce by combining all of the ingredients.

Serve the meatballs on a bed of the yoghurt sauce and enjoy.
